MPM - Out And About - 2/2/2015


OMG, It's been a great weekend, but I think we ate out at least once every day this weekend. Shame on me/us! Didn't even use any coupons. I've been doing a lot of mystery shopping and contract work latley, so usually I just eat and run or grab something at the drive-thru. But I did take advantage of mommy time as well as cashing in via Ibotta! Check out my weekly vlog on my Youtube Channel: youtube! I also fell behind on household duties. But it's a new week. It's Tuesday and we just got home. So let's dust off and start anew.

Breakfast: Oatmeal, smoothie, scrambled eggs, and eggless pancakes (see recipe below)!

Lunch: Salad, sandwiches and leftovers

Monday: Eating out (Simpre Natural)

Tuesday: Eating out (Panda Expresss)

Wednesday: Sausage Jambalaya with rice

Thursday: Sandwiches

Friday: Eating out??

What I gotta buy this week: Just fruit for snacking.

So last week we were craving pancakes! So, I was like, YES! I'll make some.... but.... WE HAD NO EGGS! I had already gotten everything ready, turned on the stove, pulled out a pan, and no eggs! Booo! So I said to hubby, "Quick, Google Eggless pancakes!" He found a recipe and read it out to me and they were soooo good! Topped them with butter and syrup. I adjusted and substituted some items, but here's the recipe:

1 to 1 1/4 cup flour
1 tbls baking powder
1 tbls sugar (organic)
1/2 tsp salt
1 cup milk
2 tbls vegetable oil
2 tbls water

Annaleah was helping me, so we just added everything at the same time ( for simplicity )

Mix together flour, baking powder, sugar and salt in a bowl
Combine milk, oil and water
Add to dry ingredients , mix until moistened.
Bake on a hot greased griddle
Turn when bubbles burst and bake other side till browned.

TADA!! It's done, add 1 tbls at a time if too thick (ours were perfect)!

Hickies: Back-to-School Series #1

Every Friday in the month of September I will share a few tips for making the transition for both kids and parents a bit easier. This first one is a doozie! HICKIES! Keep reading to learn what I'm talking about.... I try to buy my girls (i have 3 school-aged daughters) two or more pairs of shoes; an active shoe, which usually has laces, and a more casual/formal shoe, which usually doesn't have laces.
