Homemade Spaghetti Recipe *Kid-Friendly*





Happy Thursday! Who's ready for Friday? I probably say it too much, bur Friday is like any other day for most moms... but tomorrow I am excited! We'll be going on a road trip to take the girls to a different park, have a pic-nic and visit the mall and carousel. Because of that we've been saving money to get the girls a little treat while we're there and cooking and eating at home more often than not. We eat at home the majority of the time, and we did eat out once this week when we went to run some errands out of town as well.

So I thought I'd share a recipe that I used a few weeks ago to keep your costs low and make a few meals during the week with this. You just have to add the protein and carbs! lol You can also check out the video below to see the recipe in action!


Homemade Pasta Sauce Recipe:
4 lbs tomatoes, peeled and chopped
4 Cloves of garlice, chopped
1/4 cup olive oil
1/4cup fresh basil, chopped
1 tsp salt
4 sprigs parsley
1 tbls sugar

1. Head olive oil, prep tomatoes
2. Add onions, basil, garlic and salt. Sautee for 5 minutes
3. Add tomatoes, parsley, sugar and bring to a rolling boil.
4. Reduce heat and simmer uncovered for 2 hours (or more), stirring occasionally.
5. Remove parsley. Let cool and use in any recipe that calls for pasta sauce!

Makes 2-4 servings

***I sauteed the onion a few minutes before I added the garlic so that it didn't burn. and then I added the salt. I also added about 1/2 cup water before I added the tomatoes so that it lifted all the goodness from the bottom of the pan***

This pasta sauce probably cost about $.35/serving or less. I got the tomatoes for $.99 because they were ripe and were on quick sale at HEB. How can I make a pasta sauce this cheap? Here are some tips on how you can save on produce and make great "bases" for your meals, like this pasta sauce.
  1. Ask your produce manager if they offer "ripened" fruit at a discount. At HEB, usually in the morning or evening, the produce manager will bunch ripened fruit in a plastic bag (which may ripen it even further!) and mark it down for "Quick Sale for $.99." Just make sure when you go to check-out they adjust the price.
  2. Double check the "Per-Pound" produce vs. the bulk bagged produce. Example... Apples are $.50/lb and there's also a 5lb bag of apples for $2. First, that's a savings of $.50
  3. Weigh your Produce! It's one tip that I share often with strangers at the grocery store. They have the weighing scale for a reason! I often see people just bag a piece of fruit. Same as tip #2, if you have that 5lb bag of apples, weigh it! You may find that the bag is LESS, or better yet, MORE than 5lbs!
  4. Use a coupon. Yes, it's rare, but there are coupons for produce. I even found a tearpad for pomegranates, I was so excited. Usually they are printable coupons. Some coupons that I have seen for produce include; pineapple, apples, bag of soup mix, Earthbound (organic) produce, Chiquita Banana,
  5. RAIN CHECK! Most grocery stores will allow you to get a rain check for produce when they sell out. At our local natural foods store they have a really good produce sale, but their rain checks are only good for 10 days, so just verify with your store.
  6. Dollar Store Grocery Shopping. Most of the time I don't suggest shopping at the dollar store for your groceries because they are usually small portions. But when it comes to produce, especially fruit, it might be a better deal.

Ungrateful during Thanksgiving?

Hubby made me cry on Thanksgiving.... The usual share what you're thankful for, he just went all out talking about how we had one of the toughest years and we were apart from each other for six months and how much he missed us and it just sucked. Ohhhh, the waterfalls!! But yeah, it was the longest year ever. Speaking of Thanksgiving.... HAPPY THANKSGIVING! Reminds me of something that's been on my mind....

We just moved out of the valley and guess what?! The worst part moving to a new place was not the moving. Before we moved I scoped out our neighborhood, grocery stores, parks and I joined several mom groups. I knew negative Nancy’s were bound to share their troubles in Facebook groups but I’ve never heard so many complaints in one day.
