Menu Plan Monday - Cheap but Fab Meals

 These next few weeks should go by fast. Halloween is so close and I've started on my girls costumes. We got a pumpkin & a witch and our black dog will be a black cat! haha It's also going to be a bit chilly this week with a cold front coming int. First actual cold front this year!

Monday: Shimp Alfredo w/ steamed broccoli

Tuesday: Chicken Soup

Wednesday: Leftovers

Thursday: Meat Loaf with roasted corn

Friday: Lime Chicken with black beans & rice

With my couponing I had a question last week about how much I spend each week on my menus.... well let me use this week for example. I'll see if I can remember when I bought the ingrediants and what I actually have to buy this week.

Mon: The shrimp I bought about a month ago at HEB when they had a combo loco, I bought the box of shrimp and got two or three items free & I had a coupon for the shrimp as well. I used half of the shrimp already, so probably about $2 for each meal. The broccoli I bought last week at the natural food store for $1.99/lb, but I got less than a pound (only my girls and I eat it), so it was about $1.50 and I'll probably only use half of what I got (and they are organic).

Tue: Chicken soup... I got the chicken at Wal-Mart about 2 months ago, it's split breast with bone, I got a big pack in the clearance section it was about $.88/lb and I had a $1 off coupon, so was about $3 and I've already made one meal out of it and will probably get to use another one next week, so $1 per meal!! The celery I got for $.88 last week at the natural foods store, I got to buy cabbage & carrots, but shouldn't be more than $2 and I bought potatoes again at Sprouts the natural food store for $.99/5 lbs! GREAT DEAL! That meal probably will cost less than $2.50 per person!

Thurs: I buy my ground beef at HEB because it's ALWAYS cheaper. We use to get the big 15lb log of beef but with our gastritis it was too greasy, so now we get the 93% fat for about $3.50/lb and all the ingrediants were almost all bought in the clerance section including Libby's all natural veggies (with a $1/4 coupon too). I will also be using frozen corn that my grandma gave us because she can't eat much corn. This one is closer to $3/person, but worth it because we don't eat meat loaf that often.

Fri: The chicken I will be using here is a 35 pack of chicken that I buy for less than $10 at HEB. The black beans I got free last week and the rice i got for $.25 after coupon about 4 months ago (uncle ben's). Each serving will cost about $.50! BEAT MEAL OF THE WEEK!

Hickies: Back-to-School Series #1

Every Friday in the month of September I will share a few tips for making the transition for both kids and parents a bit easier. This first one is a doozie! HICKIES! Keep reading to learn what I'm talking about.... I try to buy my girls (i have 3 school-aged daughters) two or more pairs of shoes; an active shoe, which usually has laces, and a more casual/formal shoe, which usually doesn't have laces.
