Mandarin Orange Chicken Stir Fry - by me
Mandarin Orange Sauce
2 sm can mandarin oranges
2 lbs thawed, boneless, skinless, chicken strips
Pour sauce in bowl, just enough to cover the bottom. Place strips in bowl, and pour sauce until it just covers them. Marinate for at least 6 hours. Place chicken and sauce (from bowl) into frying pan and cook on medium until heated through. Drain almost all of juices out. Add desired amount of veggies, drizzle in some olive oil, and cook (on med) until veggies are tender. If you would like, turn heat up to med-high to get some browning on the chicken and veggies. At the very end, add in 1 ½ to 2 cans mandarin oranges and heat just until those are warm. Serve.
