Plent of food and nothing to make... that seems to happen a lot doesn't it. Then we find ourselves running to the store to get that one missing ingredient. Yes, it happens to use to, but we try to avoid it. Our go-to pantry meals are Lazy-man Enchiladas, Taco salads and like many other Hispanic families... Rice and Beans!
So this week I want to share some Go-To Meals and a BONUS... keep reading!
Monday: Frito Pie!
Frito Pie does not have to be a unhealthy snack/ and it can be turned into a MEAL!! How? Well.... I'm sure a lot of families have potatoes laying around... so slice those up and then lay them in a baking dish with a thin layer of your favorite chili sauce sprinkle some Fritos and a layer of cheese, cover and bake at 350 for about 10-15 minutes until potatoes are cooked thoroughly.
Tuesday: Breakfast for Dinner!
You can get creative with this one! Pancakes, waffles, bacon and egg, sausage patties! Just be sure to add some veggies like mushrooms or green peppers!
Wednesday: Red beans & rice!
This is great if you have canned beans and you can add hamburger meat or sausage to make it a main dish.
I always love to recreate leftovers. One of the best things is to make it into a soup. It can be hard for most meals, especially the Frito pie, haha!
My local grocery store has pizza dough pouches that are very affordable. Sometimes you can grab them for $.50. And another thing you can do is think out of the box! A great pantry pizza is a Mexican Pizza... beans, beef & cheese!
