Menu Plan Monday - NOTHING!


Who wants to get cooking! Last week was such a blur... actually the past two weeks. But things should get back to normal... do I always say that?! Being a MOMMY, it seems like every other week is like that. And it looks like both Vetty n Eli are coming down with a cold. And I just had a mini breakdown because I was telling myself I should take Eli to the doctor so I can get her some meds just incase soups and "mommy love" doesn't work... but then I though... "OMG, she two!" What does that mean? Well, it means she can take most OTC meds! Ahhh! She's growing too fast, she's ganna be 4 before you know it. That means she's ganna start school before you know it. Which means I have to buy her uniforms, which means I have to pay for them, which means...... AHHhh!
It was scary.... I almost started crying! But I pulled it together and just heated Eli some Manzanilla and took her a warm bath.

As for the menu this week.... For the past few months I've been spending maybe $20-40/week, but now with last week going so, horrible, for the lack of words, I have hardly nothing. I maybe over exagerating, but I need your HELP!

This is what I have in my kitchen:
FREEZER - Chicken tenders, 1 lb hamburger meat, 3 tilapia fillets, 2lbs catfish nuggets, 1 box of fish sticks

FRIDGE - butter.... chocolate.... cheese ( i think that's it )

PANTRY - raw pinto beans, brown rice, alfredo sauce, boxed potatoes, rice crispies, tomato sauce, lo mein noodles, elbow noodles, mixed fruit, nutella, popcorn and other snacks!

  1. hope your little one is feeling better - i have an almost 1 year old who ALWAYS seems to be sick, add that to working full time & it makes of lots of blurred weeks... I see several meals in your lists of items on hand with minimal amount

    1) Beans & bread (cornbread if you have it) - I cooked mine in the crock pot for about 2 days w/bacon, but whatever fat you have on hand will work.
    2) elbow pasta & tomato souse/paste = Spaghetti. Just add whatever seasons you have on hand & water to the tomato sauce/paste
    3) chicken tenders & alfredo sauce plus lo mein noodles or fried chicken tenders w/brown rice.
    4) Grilled/fried/baked tilapia fillets or catfish nuggets with boxed potatoes
    5) fish sticks & mixed fruit
    6) 1lb for hamburger meat = hamburgers for dinner – serve slider size on dinner rolls or sandwich bread cut into 1/4s

  2. maybe take some of those rice crispy's and coat the chicken tenders and make some chicken nuggets???

  3. I agree w/ the first commenter-she has some great suggestions. I would add hamburger to the spaghetti, though:)

    When I have few ingredients on hand, I love looking on www.allrecipes.com.

    They have a link at the top where you put in the ingredients that you have on hand or want and another column for the ingredients you don't have or want. It's awesome!!

Every Friday in the month of September I will share a few tips for making the transition for both kids and parents a bit easier. This first one is a doozie! HICKIES!
