Menu Plan Monday - Return

Ahhh! I thinks it's time to start menu planning again! I haven't done in for a couple weeks and I miss it so much. I hate wasting money on going out to eat. When hubby first met me, all I did was cook at home. I know he loved coming home to a home-cooked meal, who wouldn't, right? But he also got me to not worry about money so much. That's one of the reasons I did cook, was to save money. But I just got an email that says we've reached the low-balance threshold we put on the bank account. Thank gosh the freezer has everything I need... I just have to go buy from fresh fruit and veggies and we're good to go!
Here's our menu plan:

Monday: Spaghetti n meatballs (homemade) n salad

Tuesday: Chicken stir-fry w/white rice

Wednesday: Beef n veggie soup

Thursday: Chicken n white bean chili

Friday: Enchiladas n spanish rice

  2. I'll be putting my menu up today too; coincidence! Soup is such a great dish: cheap, healthy and easy to make. The weather has turned here so it's soup, soup, soup this week as it warms the cockles of our hearts. :O) x

  3. Enchiladas in Spanish Rice sound delicious. I will have to try it sometime. I love finding new recipes, I'll have to look a few up.

Ungrateful during Thanksgiving?

Hubby made me cry on Thanksgiving.... The usual share what you're thankful for, he just went all out talking about how we had one of the toughest years and we were apart from each other for six months and how much he missed us and it just sucked. Ohhhh, the waterfalls!! But yeah, it was the longest year ever. Speaking of Thanksgiving.... HAPPY THANKSGIVING! Reminds me of something that's been on my mind....

We just moved out of the valley and guess what?! The worst part moving to a new place was not the moving. Before we moved I scoped out our neighborhood, grocery stores, parks and I joined several mom groups. I knew negative Nancy’s were bound to share their troubles in Facebook groups but I’ve never heard so many complaints in one day.
